Maize is eaten in many different forms and is an ingredient in many processed products, e.g. corn flakes, popcorn, sweet corn, maize oil, polenta, cornbread, and spirits such as gin and whisky. Maize is used for many quality products, e.g. foie gras, label poultry and Bayonne ham. It is part of the staple diet in a number of countries, such as Mexico, and in Central Africa. The starch in maize explains its appeal in the human diet.
